What to do when the shopper insists on a receipt but does not want to provide his email address?

The card scheme regulations demand, that the merchant must always be able to provide a receipt to the shopper.
Should the shopper want a receipt, but is not willing to give his email address to the merchant (e.g. for privacy reasons), the merchant must provide a handwritten receipt.
